Fry Jacks: A Belizean Favorite

Fry jacks are more than just a breakfast food though, they can be enjoyed with anything really, and are super simple to make. So if you’d like to recreate the Belize fry jack at home, give this simple recipe a try:

2 cups flour
3 tsp baking powder
1/4 tsp salt
1 tbsp vegetable shortening
1 cup water
Oil for frying

Mix all dry ingredients before adding the shortening, then slowly add water a little bit at a time. The goal is for a soft—not sticky—dough. Divide your dough into two rounds and then let rest for about 15-20 minutes. Roll, then slice into triangles of desired size. Pro tip: make sure the oil in your pan is hot! When you’ve fried on both sides and they’re golden all around, they’re done.
